About 10 years ago, after extensive testing and a multitude of drugs,
my Doctor told me I was gluten intolerant. Making this discovery
gave me back a healthy life, but took away many of my favorite foods.
My
Mom has always been an incredible award-winning cook, and she made it her
mission to learn how to make bread and other basic dishes that would taste
good to me in the absence of flour. Because of Mom's "courage in the
kitchen", I have gone on to experiment even more and have created unique
recipes which I want to share.
Three years ago Mom published a cookbook full of the basics. I
have taken her idea one step further by developing specialties that we
gluten-free folks would never otherwise have, such as turkey stuffing
(without bread or rice), donuts, green onion cakes and much more. I
missed those foods and I wasn't willing to give them up from my life, so I
persevered until I was satisfied with what I could create.
I dedicate this book to my Mom, Frieda Hardman, and thank her for the
fearless way she takes on challenges and tries different methods over and
over until things turn out just right.
